We came here for our anniversary yesterday (Wednesday night) with fingers crossed because we didn’t have a reservation and couldn’t get one online either. They were super understanding and tho they were packed they managed to get a great table for us outside. I usually don’t like seating out in the street but their outdoor seating is surrounded by potted plants protecting you from the street people and cars pollution etc, so we enjoyed our table very much. Our waiter was flawless (I should’ve taken down his name for this review). He was spot on the recommendations didn’t try to push expensive items, was very attentive and at the same time we didn’t feel any pressure to leave or order in a hurry, he was perfect! I enjoyed the mozzarella and prosciutto very much for starters and hubby loved the bread and lightly pickled cauliflower. The complimentary Parmesan with creamy balsamic was delicious too and my main dish was Al dente and creamy pasta with spicy (not too spicy, just right) tomato vodka sauce. For our surprise they brought us also complimentary cute little italian colores cakes that tasted like sambuca! Yum! This was our first time there, tho we’ve been meaning to go there for a while we never had time or found reservations online. After dinner we went inside for a final drink at the bar (limoncello) and were greeted with the same courtesy and professionalism smiles on everyone’s faces, I think I found my new favorite Italian restaurant in South Beach.

They do not sell food here. Yes, they serve food but it is not what you're paying for. I know it sounds confusing but it is important to understand this when finally getting into Carbone. Many people fight for the reservation and then don't understand the food isn't what you're actually buying. They are selling the experience of eating at Carbone, which is the main draw here. Don't get me wrong, everything I had was delicious but the service made it for me. Each table has two servers: a Captain and the Captain's assistant. I was confused but delighted. The complimentary bites of spicy soppresata, pickled cauliflower, and fresh bread starts the meal off right. I went with the clams, which come three ways, and that was a 2/3 win for me. I followed that with the Spicy Vodka Rigatoni, which is a half marinara and half cream sauce with a kick. As their signature dish, it seemed quite ordinary to look at but it was anything but. So, here's tip: if your party is late and you're at the table, do not order unless you order for them. Once you order food, you cannot add to it...no exceptions. Finished with the coconut cake and the lemon cheesecake that had a sugar cookie crust. OUTSTANDING. If you can get a reservation, DO GO. A PLUS DEFINITELY RECOMMENDS. But remember, they don't sell food here. They sell the experience. If you can't get a reservation, call me.

One of the busiest restaurants in miami, reservations needed, all dishes are great, the menu is limited but very good, the food is great, nothing out of this world but a starter of bread excellent half mouth pistachio ice cream
